Recipe: Blueberry Yogurt Ice Pops

I got a small sample of cannabis flower with a curious name at Solful, a cannabis dispensary in Sebastopol, California. Upon opening the jar, the aroma whacked me upside the nose with a fruity, berry jam sweetness and smells exactly like its namesake, Blueberry Jam.
Sun-grown by Esensia Farms in Mendocino, California, it has notes of freshly preserved blueberries with vintage cheese undertones. I love a cheese board inspired strain!

Oh my! 😳 It has incredible flavor and smoothness, and sublime tranquil, full body relaxation effects. The flower smells like preserved blueberries, fruit leather and honey which pairs perfectly with yogurt and blueberries to make a sweet and icy summer treat.

Blueberry Yogurt Ice Pops

These cannabis-infused ice pops are easy and quick to make with an alcohol-based tincture, which also helps the popsicles freeze with a smooth and creamy texture.
DOSING:
Makes 10 ice pops using this popsicle mold. Double-check the math if your % THC is different or if your mold makes a different number of ice pops.
Low Dose // ~5mg THC per ice pop: You’ll need a total of 50mg THC in the entire recipe. Approximately 0.15 grams of ~20% THC cannabis flower.*
High Dose // ~100mg THC per ice pop: You’ll need a total of 1,000mg THC in the entire recipe. Approximately 2.9 grams of ~20% THC cannabis flower.*
INGREDIENTS:
2½ cups (12 oz.) blueberries, fresh or frozen
1/2 cup honey, plus 1 tablespoon
2 tablespoons lemon juice
2½ teaspoons cannabis tincture (recipe follows)
2½ cups yogurt (plain, vanilla, Greek, European style, or non-dairy yogurt)
Cannabis tincture
[ * ] grams cannabis flower (~20% THC), coarsely ground
¼ cup 100-proof, or higher, vodka or grain alcohol
DIRECTIONS:
1. Make cannabis tincture: Preheat the oven to 240°F. Place coarsely ground cannabis flower into an 8-ounce mason jar, seal with the lid to reduce smell, and heat for 40 minutes in the oven to decarboxlyate, which will activate the THC. Remove from the oven (the flower should look lightly toasted) and let cool until the mason jar is safe to touch. Pour ¼ cup of high-proof vodka or grain alcohol into the mason jar, close the lid, and shake hard to combine. Set aside and let the mixture sit for several hours to overnight.
Shake the mixture and pour through a fine mesh sieve into another small mason jar. Reserve the liquid and discard the ground flower. Label the jar: “¼ teaspoon = 5mg or 100mg THC” depending on your potency, and set aside. Shake the jar before each use.
2. Make blueberry jam: In a saucepan over medium heat, combine blueberries, honey, lemon juice, and 2½ teaspoons of cannabis tincture. Stir gently until the blueberries begin to cook down and boil. Continue simmering, stirring occasionally, for 15-20 minutes to cook down the blueberries into a thick, syrup-y sauce. The mixture will begin to thicken just a bit and the alcohol in the tincture will cook off. Remove from heat and allow the jam to cool to room temperature.
3. Make ice pops: In a medium bowl, stir together the yogurt and 1 tablespoon of honey. Gently fold in the cooled blueberry jam so there are white and blue streaks from the blueberries and yogurt. Carefully pour evenly into the popsicle molds. Freeze for 4-6 six hours or overnight.
If you’d prefer to avoid alcohol, substitute with cannabis-infused honey instead.
