Read between the lines of Lunar New Year greetings and you’ll notice that many of them are about getting rich. I grew up with the Cantonese saying, “Gung hay fat choy,” which translates to “hope you get rich.” Comedian Ronny Chieng hilariously explains why Chinese people love money more than rappers on his Netflix special.
Jokes aside, Chinese Almond Cookies are said to resemble coins and are made and served during Lunar New Year to bring good fortune. Traditionally made with lard for flavor and its distinctive crumbly flavor, they can also be made without lard with butter instead. I prefer the almond cookies made with butter so it has a crispy edge and slightly soft, chewy center.
