Chewy, crunchy, chocolatey, sweet and savory, these Easter Magic Bars are a magical mashup of blondies and magic bars. A soft cornflake and pretzel chocolate chip blondie base drizzled with peanut butter condensed milk, and topped with crunchy layers of cornflakes, pretzels, toasted coconut, and Cadbury Milk Chocolate eggs.
Made with cannabutter, these bars will have you seeing magical bunnies and easter eggs in no time. Hippity-hoppity.
Easter Magic Blondie Bars Recipe
DOSING:
Makes nine (9) large bars at ~5mg THC per serving. You’ll need a total of 45mg THC in the entire recipe. Approximately 0.35 grams of 20% THC cannabis flower. If your flower is different % THC, double-check your cannamath.
INGREDIENTS:
1½ cup (200g) all purpose flour
½ teaspoon baking soda
¼ teaspoon baking powder
½ teaspoon coarse salt
½ cup (113g) cannabutter*, room temp
¼ cup (50g) white granulated sugar
½ cup (85g) light brown sugar, packed
1 teaspoon vanilla extract
1 large egg (53g)
½ cup (75g) chocolate chips/chunks
1 cup (45g) cornflakes
1 cup (50g) crushed mini pretzels
½ cup (45g) sweetened shredded coconut
½ can (7oz.) sweetened condensed milk
1 tablespoon (20g) natural peanut butter or almond butter
1 cup (195g) Cadbury Milk Chocolate Easter Egg Candy
Flaky sea salt (for finishing)
Cannabutter*
½ cup (113g) unsalted butter, melted
0.35g cannabis flower (20% THC)
DIRECTIONS:
1. Make Cannabutter*: Preheat the oven to 240°F. Place 0.45 grams of coarsely ground cannabis flower into a pint-sized 16 oz. mason jar, seal with the lid to reduce smell, and heat for 40 minutes in the oven to decarboxlyate, which activates the THC. Remove from the oven and let cool until the mason jar is safe to touch. The ground flower will look lightly toasted.
Reduce the oven temperature to 170 degrees F. Pour melted butter into the mason jar, close the lid and shake or stir to combine. Place the sealed jar back into the oven to infuse for 3 hours. After 3 hours, remove from the oven and cool until the mason jar is safe to touch. Stir to reincorporate the liquid and milk solids with the butter, as the cannabutter comes to room temp and resolidifies.
2. Make the Blondie Batter: Preheat the oven to 340 degrees F. Line a 9x9 square baking pan with parchment paper and set aside. In a mediium bowl, whisk together flour, baking powder and salt. Set aside.
In the bowl of a stand mixer fitted with a paddle attachment, cream together cannabutter, white and brown sugars on medium speed until fluffy. Add the egg and vanilla extract, mix until well blended. Dough will look smooth like thick batter. Turn the mixer to low, and slowly add the flour mixture just until combined and no white streaks remain. Using a spatula, stir in the chocolate chips, ½ cup of cornflakes, and ½ cup of crushed pretzels. Press the batter into the bottom of a parchment-lined square pan until it fills the pan and is evenly spread.
3. Make Magic Bars: Stir together the sweetened condensed milk and natural peanut butter. Pour the mixture on top of the batter in the baking pan. Sprinkle the remaining ½ cup of cornflakes, ½ cup crushed pretzels, and ½ cup shredded coconut on top of the condensed milk mixture.
Press down lightly to adhere the toppings to the condensed milk layer. Evenly sprinkle the Cadbury Milk Chocolate Egg candies on top of the shredded coconut and press down lightly.
4. Bake the Magic Blondie Bars: Bake at 340 degrees for 35-40 minutes until the shredded coconut has toasted slightly and turned light brown on top. The condensed milk mixture may look bubbly under the coconut and between the egg candies.
Remove from the oven and sprinkle with flaky sea salt. Cool in the baking pan for 10 minutes, then lift out of the pan using the parchment paper and place onto a baking rack to cool completely. Cut into 3-inch square pieces and store covered in a cool, dry place.
RECIPE NOTES:
Peanut Butter or Almond Butter: Can use either one. Peanut butter is cheaper than Almond butter, but I used almond because that’s what I have in my house. Natural is best because of the runny consistency that mixes well with the condensed milk. Optional ingredient. Can omit for nut allergies but I think it gives the entire bar better flavor and balances sweetness from condensed milk.
Crushed Pretzels and Cornflakes: Use a generous 1 cup. The amounts don’t have to be precise.
Shredded Coconut: This should be the last topping before adding the Cadbury chocolate eggs, so it looks like a “nest” and gives color contrast for the candy eggs.
Easter Egg Candy: Cadbury Milk Chocolate Eggs look best in terms of color and hold shape while baking. M&M Peanut Butter Eggs are also delicious and bake well but the colors aren’t as pretty. Do not use the Whopper Robin’s Egg (chocolate malt balls), they will melt while baking and look like poop.
