Box Mix: Blueberry Muffins

Is there anything better than the smell of fresh baked blueberry muffins? Let’s get baked and bake some cannabis-infused blueberry muffins.

Trader Joe’s Blueberry Muffin Mix

The box mix comes with freeze-dried blueberries and makes 12 muffins. You’ll need a muffin tin, baking cups, and… cannabutter.

Makes 12 muffins. – Let’s do some canna-math! 

Desired Potency?

  • Low Dose: ~5mg THC each x 12 muffins = ~60mg THC needed in this recipe

  • High Dose: ~100mg THC each x 12 muffins = ~1,200mg THC needed in this recipe

How strong is your flower or concentrate? 

  • If you purchased your cannabis, tested THC potency is on the label.

  • Ground flower: usually between 15% to 25%

  • Trim: assume 10% to 15%

  • Concentrate/Kief/Rosin: 75% to 90%

DOSING AMOUNTS 

  • Low Dose // 5mg THC per serving: ~0.45 grams of ~20% THC cannabis flower.* 

  • High Dose // 100mg THC per serving: ~2.2 grams of ~80% cannabis concentrate, such as kief or rosin*

DIRECTIONS 

1. Make Cannabutter*: Preheat the oven to 240°F. Place coarsely ground cannabis flower or concentrate into a pint-sized 16 oz. mason jar, close the lid lightly to reduce smell, and heat for 40 minutes in the oven to decarboxylate, which activates the THC. Remove from the oven and let cool until the mason jar is safe to touch. The ground flower will look lightly toasted. 

If using ground flower, reduce the oven temperature to 170 degrees F. Pour melted butter into the mason jar, close the lid lightly (do not seal tight or the jar may crack from temp and pressure change). Place the sealed jar back into the oven to infuse for 2.5 hours. After 2.5 hours, remove from the oven and cool until the mason jar is safe to touch. Strain the melted butter through a fine mesh sieve and into a clean container. There will be some liquid and milkfats that naturally separate, and stir to reincorporate into the butter as it cools to room temperature.

If using concentrate, pour hot melted butter into the glass mason jar and use a small silicone spatula to scrape the concentrate at bottom of the jar and stir to mix evenly into butter. Cool to room temperature.

3. Baking Tips: For better flavor, substitute some sour cream or full-fat yogurt for the milk. The fat will keep the crumb moist and acid will help the muffin rise during baking. 

For the muffin top lovers, sprinkle a generous amount of coarse sugar on top of the muffin batter before baking. The sugar will caramelize and crystallize during baking to create a crunchy, golden muffin top.   

4. Adjust Oven Temp: Preheat the oven to 400 degrees F as the box directions indicate. Bake for the first 8 minutes at 400 degrees F, then turn down the baking temp to 340 degrees F for the remainder of the baking time. Bake for 25 minutes, or until a toothpick inserted in the center comes out clean. 

Muffins and quickbread recipes are tricky to infuse because they need to bake at high temps – 400 degrees F for the bread to rise and get tall fluffy peaks. But THC and terpenes start to degrade at temperatures above 340 degrees F. 

By starting the baking time at high heat, it will give the batter time to rise. The oven will still stay hotter than 340 degrees for the remainder of the bake, but hopefully, this minimizes as much THC degradation loss as possible while still making fluffy muffins.  

If you forget to turn down the temp, it’ll be okay! Your muffins may be slightly less potent or some of the THC may have converted to CBN, which may make you feel sleepy.
